We cannot do that as you are explicitly writing some byte to a[0], it can only be replaced. But the action cannot be reverted.

Try this, it will work

        char a[]={(char)scanf("%[^\n]s",a)};
        printf("the string is =%s\n",a);
        a[0] = 's'; // removing to other value
        printf("the string is =%s\n",a);
        return 0;
}

actually motive is return value of scanf will not store in a[0] it should store in some other variable
